
Gingerbread man
Even the smallest palms may help make these gingerbread males – excellent for Christmas. You need to use raisins, sultanas or Smarties to embellish

Elements
- 140g unsalted butter
- 100g darkish muscovado sugar
- 3 tbsp golden syrup
- 350g plain flour
- 1 tsp bicarbonate of soda
- 2 tsp floor ginger
- 1 tsp floor cinnamon
- pinch of cayenne pepper (elective)
- 2 balls stem ginger from a jar, chopped
To brighten
- 50g icing sugar
- a number of glacé cherries (we used undyed)

Technique
- STEP 1
Warmth oven to 200C/180C fan/gasoline 6. Line 2 baking sheets with baking parchment. Soften butter, sugar and syrup in a pan. Combine flour, soda, spices and a pinch of salt in a bowl. Stir within the butter combine and chopped ginger to make a stiff-ish dough.
- STEP 2
Wait till cool sufficient to deal with, then roll out dough to about 5mm thick. Stamp out gingerbread males, re-rolling and urgent the trimmings again collectively and rolling once more. Elevate onto baking sheets. Bake for 12 minutes till golden. Cool 10 minutes on the sheets, then raise onto cooling racks.
- STEP 3
To brighten, combine icing sugar with a number of drops of water till thick and clean. Halve then slice cherries thinly to make smiles, and minimize ginger into small squares. Spoon icing right into a meals bag, snip off the tiniest bit from one nook, then squeeze eyes and buttons, and a tiny smile onto 1 man at a time. Stick on a cherry smile and ginger buttons. Repeat; go away to set. Will hold as much as 1 week in an hermetic tin.
