Components

  • 3 tbsp olive oil
  • 6 medium purple onions, finely sliced
  • 5 tbsp purple wine vinegar
  • 100g cranberry sauce
  • 1kg candy potatoes, peeled and lower into small chunks
  • 1 tsp chilli flakes
  • 2 x 320g sheets ready-rolled puff pastry
  • 3 x 100g mushy goat's cheese with rind, damaged into massive chunks
  • overwhelmed egg, for glazing
  • thyme sprigs, to serve

Methodology

  • STEP 1

    Warmth oven to 200C/180C fan/gasoline 6. Warmth 2 tbsp of the oil in a big non-stick frying pan and cook dinner the onions over a low warmth for 20-25 minutes or till properly softened and flippantly browned. Add the vinegar and cranberry sauce, and simmer for 5-10 minutes extra, stirring till virtually all of the liquid has disappeared. Depart to chill.

  • STEP 2

    In the meantime, put the candy potatoes in a bowl and toss with the remaining oil, 1/2 tsp salt, 1/2 tsp pepper and the chilli flakes. Prepare on a baking tray and cook dinner for 20 minutes, turning midway, till softened and flippantly browned. Depart to chill.

  • STEP 3

    Scale back oven to 180C/160C fan/gasoline 4. Line two massive baking trays with baking parchment and unroll the pastry sheets on high – trimming the sides neatly at this level will encourage a superb rise. Leaving a 2cm hole across the edge, unfold the onions over the pastry, then high with the candy potatoes and goat’s cheese. Brush the overwhelmed egg across the border of the pastry and bake within the oven for 35-40 minutes or till the pastry is golden and crisp, swapping the cabinets after 20 minutes.

  • STEP 4

    Scatter over the thyme, then lower every tart into quarters (or smaller items if serving extra). Serve with a big leafy salad.
