  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • beneficiant pinch nutmeg
  • 400g blended winter greens (we used kale and cavolo nero, any giant stems eliminated and roughly chopped)
  • 200g mascarpone
  • 30g parmesan or vegetarian different, grated
  • ½ lemon, juiced
  • 320g pack puff pastry
  • 1 egg, to glaze

Technique

  • STEP 1

    Warmth oven to 200C/180C fan/fuel 6. Warmth the oil in a big saucepan, add the onion with a pinch of salt and gently fry till softened, so round 8-10 minutes. Stir within the garlic and nutmeg, prepare dinner for a minute, then add the greens together with a splash of water. Stir till wilted, so round 3 minutes, then stir within the mascarpone, parmesan and a squeeze of lemon juice. Season properly and tip the combination into the bottom of a 20cm pie dish.

  • STEP 2

    Unroll the puff pastry and brush the sides of the pie dish with water. At this level, you are able to do what you need with the pastry – you might lattice it, crimp the sides, add ornament, or simply stick it on as is.
